Indian Caramel Custard

Better that "flan" AND more delicious :) My Nana's recipe that works every time. Enjoy cold or warm.

Caramelize 1/2 cup of sugar - keep an eye on the sugar! Don't stop mixing until you are ready to pour it in the serving bowl. Turn the bowl in all directions to cover the bottom of the bowl.

1 cup milk
1 8 oz can evaporated milk
2 eggs (first beat the whites, then add the yolks)
2 tbsp sugar

First beat the egg while, then add the yolks and beat together. Next add the sugar, beating well, and lastly mix in the milk. Pour the mixture into the bowl with the caramelized sugar. Bake at 350ยบ for 45 mins to 1 hour. Test by putting a sharp knife in the center. If it comes out clean, it's done.

  1. What kind of dish do you suggest making this in? A ramekin?

  2. Yes a few ramekins work (I think about 6 for this recipe?) or you could double it and use a cylindrical bowl with a flat bottom (like a large ramekin) which is what we usually do.
