Healthy Peanut Butter Cookies

Originally from allrecipes.com but with a few adjustments.


Dry Ingredients:
5/8c whole wheat flour (adjust depending on the moisture of the batter) 
3/4 c oats 
1/2 tsp salt 
1/2 tsp baking soda 
1/2 tsp cinnamon 

Moist Ingredients: 
1¼ cups smooth natural peanut butter
1/4 c packed natural brown sugar
1/2 c liquid honey  
1 egg 
2 tsp vanilla 
optional: 1/3-1/2 c chocolate chips

Combine dry ingredients in a large bowl. Combine moist ingredients in a small bowl and pour moist ingredients into dry ingredients. Cool in the fridge for 20 minutes. Drop tablespoons of batter on a well-greased baking sheet (optional - roll ping-pong sized balls of batter in sugar). Flatten with a fork. Bake at 375 for 8-12 minutes - edges will be slightly browned.
