8 Tortillas
Shredded chicken (I use Rotisserie chicken for a nice flavor)
about 16 oz. Green Salsa Verde
Plain corn or you can put a couple of cans of Mexican corn relish
Mexican mix shredded cheese or whatever kind of cheese you like
Grease a 9x13” glass baking dish. Mix together the chicken, ½ bottle of salsa and corn. Keep half the salsa to pour on top. Heat each tortilla on a frying pan, put on a flat plate and put 2 tablespoons of chicken mixture in the tortilla and roll it and place in baking dish. When all the tortillas are placed in the dish, pour the rest of the salsa on the top. Sprinkle the cheese all over the top, cover with foil and bake for 15-20 mins on 350ยบ. Remove foil and put it back in oven until cheese melts – 5 to 8 mins.
