Sweet Carrot Souffle

A great recipe from betterrecipes.com that is super easy and warm and fuzzy.


5 cups cooked carrots
5 eggs
1 Tbsp cinnamon
3 Tbsp flour
1 1/2 cups powdered sugar
2 cups cream
1 stick butter, melted

    Cook carrots in a little water or in microwave until soft. Drain thoroughly and put into mixer bowl. With mixer on low, mash the carrots, then mix in eggs, one at a time. Add cinnamon, flour and powdered sugar; then add the cream and melted butter. Mix thoroughly. Pour into a buttered baking dish and bake at 350 degrees for 30 minutes. Sprinkle the top with a little more powdered sugar before serving.

    Notes: This is a great substitute for sweet potatoes for holidays or just a good way to get the family to eat carrots.
